Highland Fine Cheeses
Situated in Tain in the northeast of Scotland, Highland Fine Cheeses is a remarkable independent dairy operating from the historic grounds of Blarliath Farm. The Stone family has been deeply embedded in Scottish cheese-making since the 1950s, a journey that famously began when a ten-gallon churn of milk was soured to create crowdie.
Today, this proud family business is steered by Rory Stone, who joined his mother Susannah in 1994. Under his vision, the dairy shifted its focus towards more complex, mould-ripened and washed-rind styles.



A MASTERCLASS IN MOULD AND CURD
The team at Highland Fine Cheeses maintains a deeply grounded, artisan approach to their craft. They work closely with local Highland farmers to source the finest milk, encouraging traditional, grass-fed herds.
The fermenting and maturing process takes place entirely within the old walls of the farm. By marrying time-honoured Scottish dairy practices with techniques learned directly from French cheese makers, they have developed a world-class, uncompromising selection of cheeses. It is a deliberate process that requires immense patience, resulting in highly tactile cheeses with exceptional character and, quite often, rather memorable names.

STRATHDON BLUE
This exceptionally satisfying provision converts even those who traditionally avoid blue cheese. It is remarkably sweet and velvety, offering a mould-ripened, meaty profile. Fine threads of blue run clearly through a creamy, white paste, delivering a robust finish that pairs flawlessly with a dark craft ale or a crisp water biscuit.
MORANGIE BRIE
Named after the Glen of Tranquillity, this is a magnificent, award-winning interpretation of a classic bloomy rind cheese. It features a delicate, edible white rind and a rich creamy paste that melts in the mouth when perfectly ripe. With mild mushroom and grass undertones, it serves as a definitive anchor for any thoughtful Scottish cheese board.
MINGER
A brilliantly named, washed-rind cheese with a striking bright orange annatto exterior. While the aroma is decidedly punchy and hints heavily at the farmyard, the paste inside is deliciously oozy, mildly nutty, and slightly lemony. It becomes decadently runny when ripe, providing a highly tactile, expertly balanced provision that completely redefines traditional Scottish dairy.
