ISLE OF RAASAY DISTILLERY

Situated just a short ferry ride off the east coast of Skye, the Isle of Raasay is a breathtaking Hebridean landscape rooted in centuries of illicit distilling. In 2017, the Isle of Raasay Distillery became the first legal distillation of whisky on the island. Co-founded by Master Distiller Alasdair Day, this remarkable enterprise has quickly become a cornerstone of modern Scottish distilling, creating provisions that perfectly capture the rugged, mineral-rich geology of their Hebridean home.

A NEW ERA OF ISLAND DISTILLING

The terroir of Raasay influences every single drop of the spirit. The foundation of their craft begins with water drawn from Tobar na Bà Baine (the Well of the Pale Cow), a sixty-metre well located directly on the distillery site. Falling first as rain on Dùn Cana, the highest peak on the island, the water filters slowly through volcanic rock and Jurassic sandstone, adding a distinctly mineral character to the malt.

The production process itself is brilliantly grounded and uncompromising. The team mashes 100% Scottish barley and allows for notably long fermentation times of up to five days, or 118 hours. This deliberate, patient approach develops sweet, dark fruit characteristics in the spirit long before it ever touches a cask.

THE ART OF THE SIX CASK RECIPE

Where the Isle of Raasay truly redefines island whisky is through their complex maturation process. Master Distiller Alasdair Day developed a highly innovative six-cask recipe, maturing peated and unpeated spirit completely separately. The raw spirit is filled into first-fill American Rye whiskey casks, fresh virgin Chinkapin oak, and first-fill Bordeaux red wine casks.

As noted by esteemed whisky writer Dave Broom, this technique allows the different styles and wood types to create a remarkably broad palate of flavour. Rather than keeping the styles isolated as is traditional, the team carefully marries these six casks together to produce a deeply harmonious, complex finish that represents the full possibilities of the distillery.

This flagship single malt is a magnificent provision that brilliantly showcases their innovative six-cask recipe. It is bottled in a striking glass decanter that features the fossils and rocks of the Raasay landscape moulded directly into the glass, ensuring you hold a piece of the island with every pour. The whisky itself delivers a beautifully structured profile, offering a lightly peated, robust foundation layered with rich, dark fruit flavours and a faint hint of heather smoke.
It provides a highly tactile, deeply satisfying finish that serves as a definitive anchor to any artisan Scottish curation.
