Hawkhead whisky Smoked
Operating from New Cumnock in the west of Scotland, Hawkhead Whisky Smoked is an award-winning independent smokehouse dedicated to a traditional Scottish craft. Founded by Chris Perry-Jones, this innovative team captures the authentic heritage of the Scottish larder by marrying high-quality provisions with a smoking process that has remained largely unchanged for hundreds of years.



TIME-SERVED OAK AND INGRAINED FLAVOUR
The foundation of Hawkhead's exceptional produce lies entirely in their wood. They strictly use aged-out oak casks sourced directly from Scottish distilleries. These barrels begin their journey as American Oak used for Bourbon, before crossing the Atlantic to service the Scottish whisky industry for decades, with some reaching up to seventy years of age before their retirement.
Rather than allowing these historic barrels to be chopped down for garden planters, Chris and his team rescue and break down the oak staves to burn in their smokehouse. Because the wood has spent decades absorbing maturing Scotch, the whisky is deeply and visibly ingrained within the grain. As the staves burn, they release layers of complex, profoundly rich flavour that simply cannot be replicated by standard smoking chips.

This deeply satisfying savoury provision brilliantly showcases the smokehouse's craft. Taking naturally smooth cashews, the team slowly smokes them over reclaimed whisky barrel oak to impart a mellow, robust depth. They are then finished with a vibrant, fiery spice blend to create a beautifully warming heat. This delivers an intense, highly tactile flavour profile that balances rich wood smoke with a sharp, peppery kick. They serve as an irresistible artisan addition to any curation, pairing flawlessly with a complex single malt or a dark, malty craft ale.
