Connage Highland Dairy
Situated in Ardersier near Inverness, right along the shores of the Moray Firth, Connage Highland Dairy is a cornerstone of authentic Scottish cheese-making. Founded by Hamish Clark, the farm remains a thoroughly traditional, fully organic family enterprise. Today, the business is expertly guided by Jill and Callum Clark, along with Cameron and his wife Eileen. Together, they oversee every single step of the process, ensuring uncompromising traceability from cow to cheese.



A CLOSED-LOOP ORGANIC SYSTEM
The foundation of Connage’s exceptional dairy lies in an absolute commitment to animal welfare and sustainable farming. Cameron and Eileen manage a dedicated herd of 150 cows, comprising Holstein Friesians, Jersey crosses, and Norwegian Reds.
Crucially, the family operates a completely closed-loop system. They grow their own organic feed on the farm, ensuring the cows graze freely on nutrient-rich clover pastures. While Jill and Callum oversee the cheese production in a purpose-built dairy, they rely entirely on time-honoured, artisan techniques. This highly grounded approach captures the unique coastal terroir of the Highlands, producing multi-award-winning cheeses that have gained remarkable international acclaim.

ORGANIC DUNLOP
Crafted to a traditional seventeenth-century recipe originally from Ayrshire, this award-winning Scottish hard cheese is deeply satisfying. The team continues to dress each truckle in muslin, sealing in moisture as the cheese matures carefully over seven months. It delivers a remarkably nutty, warm, and creamy profile that lingers beautifully on the palate. It provides a highly tactile, golden anchor to any artisan cheese board, pairing flawlessly with a rich red wine or a robust plum chutney.
ORGANIC CLAVA BRIE
Named after the ancient, prehistoric burial cairns of Balnuaran of Clava, whose circular stone rings are mirrored in the shape of the cheese, this is a magnificent Scottish interpretation of a soft-ripened classic. The delicate curd is hand-ladled into moulds, creating a beautifully soft, bloomy rind and an earthy interior that becomes increasingly unctuous as it ripens. The flavour is distinctly buttery with subtle mushroom and grassy notes, finishing with a cool, elegant freshness. It serves as an essential, creamy addition to any thoughtful curation.
