Produced on the shores of the Moray Firth at Ardersier by the Clark family at Connage Highland Dairy, Clava Organic Brie is a standout addition to the Scottish larder. Taking its name from the nearby prehistoric Clava Cairns, the family-run organic creamery uses traditional methods to hand-ladle delicate curds into circular moulds.

Made with milk from their organic herd grazing on local clover pastures, it features a downy white rind and a smooth, velvety centre. In its youth, the profile is mild and creamy, maturing over time into a soft, complex cheese with earthy notes of wild mushroom and a grassy finish.
