SUMMERHOUSE DRINKS & WALTER GREGOR'S

The foundation of their craft is rooted in local history. The farm sits just a few fields away from the former manse of Walter Gregor, a nineteenth-century minister who served the historic parish of Pitsligo by order of Queen Victoria. As a renowned academic and plantsman, he spent much of his time tending to his walled garden. Inspired by his legacy, Claire and her team still grow some of the fresh herbs and botanicals used in their drinks within that very same walled garden today.

The production process is refreshingly grounded. The team strictly avoids mass-market shortcuts, ensuring every recipe is developed entirely in-house. They use all-natural ingredients without any artificial colours, flavours, or preservatives. Crucially, the drinks are pasteurised directly in the bottle. This deliberate technique, combined with the specific shape of their carbon dioxide bubble, ensures the liquids are not aggressively fizzy. Instead, they deliver a gentle, refined carbonation that allows the natural flavours and paired spirits to shine through without overpowering them.
