Ullapool SMokehouse
Operating just a short walk from our own Croft & Coast studio in the Highland fishing village of Ullapool, Ullapool Smokehouse represents the absolute pinnacle of traditional Scottish seafood. For over thirty years, founder Iain Boyd has dedicated himself to a completely uncompromising approach to smoking salmon. In a modern food industry that often relies on speed and mass production, Iain operates under a wonderfully simple ethos: nothing forced, nothing compromised, nothing rushed.



A PATIENT HIGHLAND CRAFT
The foundation of their exceptional produce begins with the fish itself. Iain works exclusively with Wester Ross Salmon, an independent farm located just around the coast that has been hand-rearing salmon for over forty years. Their hands-on, highly considered approach to aquaculture results in a firm, beautiful texture that serves as the perfect canvas for the smokehouse.
The curing process is remarkably grounded. While mass-market producers often use quick brine injections for speed, the team in Ullapool relies entirely on time and tradition. The salmon fillets are cured overnight in pure sea salt for twelve hours before being washed by hand and rested in a cold chiller. The smoking process itself takes up to twelve hours, using oak chips repurposed from retired Scottish whisky barrels. This patient, four-day cycle allows the fish to deeply absorb the rich, complex tannins of the wood, imparting a distinct flavour that simply cannot be replicated by modern shortcuts.

COLD SMOKED SALMON
This highly tactile, deeply satisfying provision is a definitive example of Highland craft. Following a slow cure and twelve hours in the kiln, the salmon is finished with a local malt whisky glaze. It delivers a remarkably smooth, buttery texture with a profound, earthy smoke profile. It provides a magnificent anchor to any artisan breakfast curation, pairing flawlessly with a crisp oatcake and a squeeze of fresh lemon.
HOT SMOKED SALMON
For a richer, more robust experience, this variation is carefully roasted at two hundred degrees for fifteen minutes and finished with a wild heather honey glaze. The result is a wonderfully flaky, dense texture that balances the deep heat of the whisky barrel smoke with a natural, rolling sweetness. It serves as an irresistible addition to a coastal seafood board or a fresh, peppery salad.
