Island Bakery
Founded on the Isle of Mull by Joe and Dawn Reade, Island Bakery has evolved from a small local bread operation in 1994 into one of Scotland’s most celebrated organic biscuit makers. Operating from a custom-built facility in Tobermory, they are fiercely dedicated to preserving their delicate island ecosystem through uncompromising sustainable practices.




A BAKE POWERED BY NATURE
The Reades refuse to rely on fossil fuels. In 2012, they moved into a purpose-built bakery powered entirely by local renewable energy. Electricity is generated by a hydro-electric turbine on the Tobermory River, supplemented by a local wind turbine.
Perhaps most remarkably, their unique ovens are heated entirely by local wood chips sourced from Mull’s own timber plantations. This small-batch, wood-fired baking process imparts a delicate, slightly uneven cobbled texture to the biscuits, ensuring every single bake is entirely unique.


UNCOMPROMISING ORGANIC INGREDIENTS
Island Bakery operates with strict organic principles, ensuring no GMOs, preservatives, artificial colours, or palm oil ever enter their kitchen. They rely purely on exceptional natural ingredients, from proper organic butter to precise botanical oils. This dedication has earned them an impressive array of accolades, including multiple Great Taste Awards and recognition from the Free From Food Awards.

ORGANIC LEMON MELTS
These are the bakery’s definitive provision and a firm favourite amongst our customers. The wood-fired ovens produce a remarkably tender, fine crumb that genuinely melts on the tongue. Baked with pure organic butter and infused with 1% actual lemon oil, the shortbread delivers a sharp, sunny citrus note. This is brilliantly balanced by a generous half-coating of proper, creamy white chocolate. It is a delightfully refined artisan treat that pairs beautifully with a delicate green tea or a light, floral coffee.
