The foundation of Birkentree relies upon an intimate understanding of the forest. The team works exclusively with ancient Highland birch trees, many of which are between two hundred and three hundred years old. Rather than forcing production, Rob and his team must wait for a highly specific window in early spring when the sap naturally rises from the roots to nourish the budding branches.

During this brief period, they carefully and sustainably tap the trees to draw out the clear, mineral-rich liquid known as Highland Silver Sap. It is a slow, patient harvest that demands absolute respect for the environment. Crucially, their work goes beyond extraction. A core part of the Birkentree ethos is the active restoration and management of these ancient woodlands, ensuring the health of the Highland ecosystem is preserved for future generations.

This raw, unadulterated birch sap acts as a revelation for fine spirits. While adding tap water to a single malt can often drown its character, Birkentree operates differently.
