Tapped entirely by hand during a fleeting three week window in early spring when the forest awakes from its winter slumber, this unique elixir is 100% natural tree sap collected from venerable wild birch trees ranging from one to three centuries old. By reviving this lost art, which largely disappeared from rural culture after the Highland Clearances, Birkentree celebrates a sacred, sustainable practice stretching back over 5,000 years into Neolithic history.
