Highland Boundary Scots Pine Wild Botanical Syrup (250ml)


Produced at Kirklandbank Farm near Alyth by Dr Marian Bruce and Simon Montador, this wild botanical syrup brings an innovative forest profile to the Scottish larder. Situated along the geological line of the Highland Boundary Fault, the distillery ferments and slow-ages the green cones of the Scots pine, adapting traditional preservation methods into a native Scottish craft.

Infused with young pine cones harvested at peak resin content and layered with British beet sugar over the course of a year, the syrup yields an intense, complex profile. It delivers a dark golden hue, a rich caramel depth, smoky undertones, pine resin, wildflower notes, and a bright citrus finish.

Offering a versatile provision for the bar and kitchen, this syrup serves as a finishing drizzle for baked cheeses, charcuterie, or desserts, as well as a sweet mixer for forest-driven cocktails.
